Executive Chef Austin Simmons and HeartBrand Beef President Jordan Beeman have been invited to the prestigious James Beard House in New York City to present a one-night-only dinner on Tuesday, March 31st.

Entitled “Heart of Texas”, the dinner reunites the long-time friends and is inspired by Simmons’ and Beeman’s original “The Cut – CollaborEIGHT”, a curated eight-course, ranch-to-plate collaboration dinner.
The James Beard House dinner will include the standout dish of side-by-side tastings of two-year-old and 10-year-old cattle for guests to experience the vastly different flavor profiles associated with different aging processes, as well as Simmons’ signature HeartBrandX, a 10-year-old Japanese Akaushi beef program exclusively available at TRIS.
Tickets are $140 for James Beard Foundation members and $180 for the general public and includes paired wines. The dinner is limited to 55 guests and proceeds will benefit the James Beard Foundation’s mission to celebrate, nurture, and honor chefs and other leaders making America’s food culture more delicious, diverse, and sustainable for everyone. The James Beard Foundation hosts around 200 events at the Beard House annually, designed to educate, inspire, entertain, and foster an appreciation of American cuisine. These events are all located at the historic James Beard House at 167 West 12th Street (between 6th and 7th Avenues), in Manhattan’s Greenwich Village neighborhood.
